Short answer
Turkish pine honey is a honeydew honey made from the secretions of the scale insect Marchalina hellenica living on pine trees. It is dark and low in glucose and pollen, so it crystallizes slowly.[2]
Where it comes from
In Türkiye, the main honeydew producer is the scale insect Marchalina hellenica, living mainly on red pine and stone pine.[1] One study reports that nearly 90% of the world's pine honey is produced on Türkiye's Aegean and Mediterranean coasts.[2]
Properties
Being honeydew honey, it has higher electrical conductivity and lower total sugars than blossom honey.[3] Its low pollen and high fructose levels mean it does not crystallize easily.[2]
